June 1st Produce

Here are the items you can expect at Market {M} and in the CSA {CSA}:

• Ford Hook Swiss Chard {M/CSA}: the heat has me craving salads – here are a few that are based on Swiss chard: Raw Swiss Chard Salad with Cranberries, Almonds and Feta, Swiss Chard Salad with Lemon, Parmesan and Breadcrumbs, and Apple-Walnut Rainbow Chard Salad.
• Young Romaine & Green Leaf Lettuce {M/CSA}: if you are looking for a little salad inspiration, look no further than our The Essential Elements to a Satisfying Salad post. We dig into what makes a salad satisfying and how you can make yours great with whatever you have on hand.
• Herbs {M/CSA}: we will have parsley, rosemary, English thyme, oregano, lemon balm, borage and mint. You may not be familiar with borage – you can eat the blue flowers and the leaves, which taste like cucumber. If you are looking for more information, check out this and this website.
• Toscano Kale {CSA}: this kale makes a great base to any number of salads, but I really love it with lots of other fresh veggies topped with a thicker, but not necessarily unhealthy, dressing. Try our Hemp Seed “Ranch” Dressing to turn these greens into a great salad!
• Tender Collard Greens {CSA}: sticking with the fresh and healthy theme this week, may I suggest this Collard Green Salad with Strawberries and Tahini Dressing? Yum!
• Beets with Greens {CSA}: I love roasted beets but it is getting to be that time of year when I despise turning the oven on. If you feel the same way, I think you will love our Beet & Chia Seed Smoothie. It is quick and refreshing!
• White Kohlrabi {CSA}: our Raw Sesame Marinated Kohlrabi is a great way to enjoy this delicious vegetable fresh!
• Red Radish {CSA}: for a refreshing side dish to any number of meals, give our Radish & Green Onion Tzatziki a try!
• Cabbage {M}: stop by our booth and learn how to make sauerkraut when you pick up your veggies!
