On a hot July afternoon, there is nothing better than a smoothie packed with ice cold fruity goodness! This is an excellent way to put those tasty CSA cucumbers to good use. If, in fact, you can refrain dipping them in hummus!
Cucumber and Strawberry Smoothie:
(Makes 2 rather large smoothies)
3 cups of frozen strawberries
4-5 mint leaves, torn
1 large cucumber, or 2 smaller ones, sliced
2 cups of juice (any kind will do) or soy milk
Toss everything in a blender and blend till blended!
Enjoy on your front porch or back deck or tree house or side yard or sidewalk or, ya know, somewhere outside.
